Cookie crust jam pie combines a crunchy cookie crust with your favorite jam. This light dessert is super easy and you don’t need any special equipment at all. This fact makes this dessert very quick to make and since it keeps fresh in an airtight container for up to a week it is a favorite for busy moms who like to have a snack in the cupboard at all times. This cookie crust jam pie is not at all messy to eat so it is ideal to add to the kids lunches or to take a piece with you while you are on the run. All kinds of jam taste great in this cookie crust. A hint is to add some water to the jam and thin it out before filling the pie so that it doesn’t get too hard when cooled after baking.


  • 320 g margarine
  • 90 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 480 g all purpose flour
  • 2 tsp baking powder
  • 500 g jam


Step 1

Cream sugar and margarine

Step 2

Add eggs

Step 3

Attach hook and add dry ingredients slowly

Step 4

Spread 3/4 mixture in pan

Step 5

Fill with jam

Step 6

Top with strips of remaining dough

Step 7

Bake on 180 C for 25 minutes
